Banana Pancakes
It is easy to end up with too many bananas or with some old, mushy, browning bananas. While they don’t look very appetizing, overripe bananas can be used in a variety of recipes! Overripe bananas have more antioxidants (which boost your immune system) and more sugars (which make them an excellent supplement to processed sugars). By finding creative ways to use foods that may not look great, not only can you discover some yummy recipes, but you can also help contribute to reducing food waste! Banana pancakes are an easy and yummy way to use your overripe bananas
- 4 bananas
- 2-4 eggs
- ¼ cup flour
- ½ tsp baking powder
- ½ tsp salt
- (optional) cinnamon, nutmeg, and/or vanilla for flavor
1. Mash the banana with a fork (it’s ok to leave some chunks). Add the egg, flour, baking soda, salt, and any flavor additions. Mix thoroughly.
2. On medium heat, add butter or oil to a pan. Once heated, add about ¼ cup of mix to the pan. Cook about 3 minutes on each side so that they are browned and cooked through.
3. Top with fruit, syrup, honey, or whatever you like!
