Breakfast Hash

Potatoes aplenty? Mix up your morning routine with this delicious breakfast hash! This recipe was developed by GROW, “a project that provides resources and opportunities centered on nutritional, mental and physical wellness for those experiencing food insecurity in the Durham and Chapel Hill communities.”

Prep time 15 minutes
You will need:
  • 3.5 tablespoons butter, divided
  • 1 bell pepper (or other type of pepper), chopped
  • 5 potatoes, diced
  • 6 eggs, lightly beaten
  • 1/2 onion, chopped
  • 3/4 cup shredded cheese
  • Salt & pepper, to taste

 

Directions:

  1. Melt 3 tablespoons of butter in pan.
  2. Add in bell pepper and onion. Sauté for 3 minutes.
  3. Toss in potatoes with bell pepper mixture, and season with salt and pepper to taste. Spread into an even layer; let cook until lightly brown, about 6-7 minutes.
  4. Push potatoes to one side of pan. Melt remaining butter in empty half of pan and pour in eggs. Scramble eggs.
  5. Toss mixture together, and sprinkle with cheese!
