Potato Latkes

Potato latkes are a common food served during the Jewish celebration of Hanukkah. Many of the foods prepared for Hanukkah, including latkes, are fried in oil. This is because Hanukkah celebrates the oil that burned for 8 days and provided light. These latkes are delicious on there own, but are brought to a new level when paired with applesauce!

You will need:

  • 3 large white potatoes
  • 1 yellow onion
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 cup flour (substitute matzo meal or ground oats)

Directions:

  1. Shred your onion and potatoes using a food processor or a cheese grater. Using paper towels, squeeze excess water out of the grated mixture. The potato and onion do not need to be bone dry but removing some of the moisture will help the latkes crisp in the oil.
  2. Mix all other ingredients into the potato and onions.
  3. Heat a few tablespoons of oil in a saucepan over medium-high heat. Pick up about a 1/3 cup of the mixture and flatten into a a pancake shape about 1 inch thick. Place in the oil and let cook on both sides for about 4 minutes or until brown and crispy. Repeat with the rest of the mixture, adding oil as needed. The latkes do not need to be swimming in oil but there should be enough oil to coat the pan generously.
