Roasted Rutabaga
When we received an entire pallet of these waxy, purple-ish, round vegetables labeled “rutabaga,” I had no idea where to start! Turns out, rutabaga is very similar to a turnip and other root vegetables. Before you decide you hate turnips (and therefore rutabaga), try this recipe! In my opinion, with a little oil, salt, and pepper, anything crisped is delicious.

Directions:
- Peel your rutabaga with a vegetable peeler or a sharp knife.
- Cut into ~1 inch cubes.
- Spread on a tray and toss in olive oil (or butter) so that each cube is coated
- Add salt, pepper, and any other spices you want to try! (I like rosemary)
- Bake at 350°F for about 40 minutes until browned and softened.=
